Cinnamon Buns

When Cinnabon left the University Mall years ago, I was sad. They were so good. This recipe is almost identical. It is delicious and not very difficult. 



Cinnamon Rolls

Dough

1 cup Warm Milk (110°F)
2 Eggs, Room Temp
4 ¾ cups Bread Flour
1/3 cup Margarine, Melted
½ cup White Sugar
2 ½ tsp Yeast
1 tsp Salt

Dissolve yeast in warm milk in a large bowl. Mix in the sugar, margarine, salt , and eggs. Add flour and mix well. Heat oven to 200° and turn off. Put dough in a greased bowl, cover and put in oven for about an hour or until doubled. After the dough has doubled its size, turn it out onto a lightly floured surface, cover and let rest 10 minutes. In a small bowl combine brown sugar and cinnamon.

Cinnamon Mixture
2 ½ Tbsp Ground Cinnamon
1 cup Brown Sugar, Packed
1/3 cup Butter, Softened

Roll dough into a 16x21 inch rectangle. Spread dough with 1/3 cup butter and sprinkle evenly with cinnamon/sugar mixture. Roll up dough and cut into 12 rolls. Place rolls in a lightly greased 9x13 baking pan. Cover and let rise until nearly doubled, about 30 minutes. Pre-heat oven to 400°F. Bake rolls in preheated oven until golden brown, about 16 minutes. While rolls are baking beat together all ingredients for the icing.

Icing
¼ cup Butter, Softened
1 - 3oz pkg. Cream Cheese, Softened
1 ½ cups Powdered Sugar
½ tsp Vanilla
1/8 tsp Salt

Spread icing on rolls while still warm.
